Bbq Tofu Cauliflower Lettuce Wraps

Ingredients

Rub

  • 1/2-1 head cauliflower broken into florets
  • 1 block tofu, pressed and patted dry, cut into cubes
  • 2 tsp paprika
  • 2 tsp cumin powder
  • 2 tsp chilli powder
  • 2 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Ground pepper

Sauce

  • 4 Tbsp tamari
  • 3 Tbsp maple syrup
  • 3 Tbsp sriracha or favourite hot sauce
  • 3-4 Tbsp olive oil
  • 2 Tbsp tomato paste

Wrap components

  • Lettuce leaves

Preparation

  1. Preheat the oven to 425 degrees Fahrenheit.

  2. Place the tofu and cauliflower in a large bowl.

  3. Mix the rub ingredients together and sprinkle evenly over the tofu and cauliflower.

  4. Line a cookie sheet with parchment paper and transfer the tofu and cauliflower to it.

  5. Roast for 15 minutes, then flip and roast for another 10 minutes.

  6. Coat with the BBQ sauce and return to the oven for 5-10 minutes until caramelized.

  7. Assemble the wraps by placing the mixture in lettuce leaves and serve.

Tips

  1. Make a batch or two to enjoy throughout the week as one wrap may not be enough.
