Bbq Tofu Cauliflower Lettuce Wraps

Ingredients

Rub

  • 1/2-1 head cauliflower
  • 1 block tofu
  • 2 tsp paprika
  • 2 tsp cumin powder
  • 2 tsp chilli powder
  • 2 tsp garlic powder
  • 3/4 tsp kosher salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Ground pepper

Sauce

  • 4 Tbsp tamari
  • 3 Tbsp maple syrup
  • 3 Tbsp sriracha or favourite hot sauce
  • 3-4 Tbsp olive oil
  • 2 Tbsp tomato paste

Preparation

  1. Preheat oven to 425°F.

  2. Place tofu and cauliflower in a large bowl.

  3. Mix the rub ingredients together and sprinkle evenly over the tofu and cauliflower.

  4. Line a baking sheet with parchment paper and transfer the mixture to the sheet.

  5. Roast for 15 minutes, then flip and roast for another 10 minutes.

  6. Mix together the sauce ingredients to make the BBQ sauce.

  7. Coat the tofu and cauliflower with the BBQ sauce and roast for an additional 5-10 minutes until caramelized.

  8. Serve in lettuce leaves as wraps.
