Bbq Tofu Cauli Lettuce Wraps
Ingredients
- 1/2-1 head cauliflower, broken into florets
- 1 block tofu, pressed and patted dry, cut into cubes
- 2 tsp paprika
- 2 tsp cumin powder
- 2 tsp chili powder
- 2 tsp garlic powder
- 3/4 tsp kosher salt
- 1/2 tsp smoked paprika
- 1/2 tsp cayenne pepper
- Ground pepper
- 4 Tbsp tamari
- 3 Tbsp maple syrup
- 3 Tbsp sriracha or favorite hot sauce
- 3-4 Tbsp olive oil
- 2 Tbsp tomato paste
Preparation
Preheat the oven to 425°F.
Place the tofu and cauliflower in a large bowl.
In a separate bowl, mix together the paprika, cumin powder, chili powder, garlic powder, kosher salt, smoked paprika, cayenne pepper, and ground pepper to make the rub.
Sprinkle the rub evenly over the tofu and cauliflower in the bowl, coating them well.
Place parchment paper on a cookie sheet and transfer the coated tofu and cauliflower onto the sheet.
Roast in the preheated oven for 15 minutes, then flip and roast for an additional 10 minutes.
In a small bowl, combine the tamari, maple syrup, sriracha (or hot sauce), olive oil, and tomato paste to make the sauce.
Remove the tofu and cauliflower from the oven and coat them with the BBQ sauce.
Place them back in the oven for 5-10 minutes, or until caramelized.
Once cooked, use the BBQ tofu and cauliflower to fill lettuce wraps.
