Candied Walnuts with Cinnamon and Sugar

Ingredients

  • 1 cup of organic cane sugar
  • 1 1/2 tbsp of organic ground Saigon cinnamon
  • 1 tsp of salt
  • 2 egg whites
  • 2 tbsp of water
  • 1 tsp of pure vanilla extract
  • 1 pound of shelled walnuts

Preparation

  1. Preheat oven to 250 degrees.

  2. In a medium bowl, mix together 1 cup of organic cane sugar, 1 1/2 tbsp of organic ground Saigon cinnamon, and 1 tsp of salt.

  3. In a large bowl whisk together 2 egg whites, 2 tbsp of water, and 1 tsp of pure vanilla extract.

  4. Add 1 pound of shelled walnuts (crush into smaller pieces first if desired) and coat evenly with wet ingredients.

  5. Pour cinnamon sugar mixture over walnuts and stir to coat.

  6. Spread walnuts on a baking sheet lined with parchment paper and bake for one hour. Stir every 20 minutes.

  7. Enjoy these as a sweet snack or over a salad.
