Chocolate Pie with Whipped Cream Topping

Ingredients

Dough

  • 1.5 cups flour
  • 0.5 teaspoon salt
  • 0.5 teaspoon cinnamon
  • 0.5 cup chilled vegetable shortening
  • 5-6 tablespoons iced water

Filling

  • 0.75 cup fine sugar
  • 3 tablespoons starch
  • 3 tablespoons cocoa powder
  • pinch salt
  • 1 cup liquid cream
  • 3 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 2 cups milk
  • 100 grams chopped chocolate

Top layer

  • 1 cup liquid cream
  • 2 tablespoons fine sugar

Decoration

  • chocolate flakes

Preparation

  1. In a bowl, place the flour, salt, cinnamon, and shortening. Use a pastry cutter to mix until it resembles breadcrumbs.

  2. Add 3 tablespoons of water and mix with a fork until dough forms. Add another tablespoon and mix again. Check if it holds together; add more water if needed, but do not make it too wet.

  3. Place the dough on a surface, shape into a disk, and do not overwork. Chill for 30 minutes.

  4. Preheat the oven to 200°C. Prepare an 8-inch pie dish.

  5. Roll out the dough between two sheets of parchment paper to a circle larger than the dish.

  6. Place the dough in the dish, line with parchment and weights, and bake for 20 minutes until golden. Cool completely.

  7. For the filling: Mix sugar, starch, cocoa, salt, cream, egg yolks, and vanilla. Gradually add milk and cook until it boils. Add butter and chocolate, stir until melted, and cool slightly.

  8. Pour the filling into the baked crust.

  9. For the topping: Whip cream with sugar until doubled in volume.

  10. Spread the topping on the pie and decorate with chocolate flakes.
