Mini Apple Cheese Tart
Ingredients
Dough
- 1/2 cup flour
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup powdered sugar
- 1 large egg
- 1/2 cup butter at room temperature
- 4 cubes cream cheese at room temperature
Apple mixture
- 2 large apples
- 1 tablespoon cinnamon
- 2 tablespoons sugar
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
Cheese mixture
- 4 cubes cream cheese at room temperature
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup fine granulated sugar
Top layer
- 1 large can cherry pie filling or blueberry pie filling
Preparation
Preheat the oven to 180 degrees and set the middle rack. Use mini cupcake molds.
For the dough: In a mixer bowl, place flour, baking powder, salt, sugar, egg, butter, and cream cheese. Attach the paddle and mix until smooth.
Shape the dough into small balls. Place them in the molds and press in the center to cover the bottom and sides. Set aside.
For the apple mixture: Peel and grate the apples. In a saucepan, place apples, cinnamon, sugar, lemon zest, and lemon juice, and cook on low heat until apples dry out. Spread over the molds.
For the cheese mixture: In a deep bowl, place cream cheese, egg, vanilla, and sugar. Whisk with a mixer until smooth and spread over the molds.
Bake the tart for 15-20 minutes until golden brown. Let it cool.
Fill the top of the tart with cherry pie filling or blueberry and serve.
