Crispy Baked Sweet Potato Nuggets

Ingredients

  • 1 can (15 ounce) chickpeas
  • 1 1/2 cups mashed cooked sweet potato
  • 1 cup flax seed meal
  • 1/2 cup almond flour
  • 1 tbsp coconut flour
  • 1 tsp salt
  • 1 tsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder

Preparation

  1. In a food processor, combine the chickpeas and the sweet potato and blend together.

  2. Add the mixture to a bowl with the flours and spices.

  3. Mix everything together well and use your hands to make it into a dough by pressing it together.

  4. Preheat oven to 375°F.

  5. Line a pan with parchment paper.

  6. Form nugget shapes with the dough mixture and place on the pan.

  7. Bake for 20-22 minutes flipping halfway through.
