Crispy Baked Sweet Potato Nuggets
Ingredients
- 1 can (15 ounce) chickpeas
- 1 1/2 cups mashed cooked sweet potato
- 1 cup flax seed meal
- 1/2 cup almond flour
- 1 tbsp coconut flour
- 1 tsp salt
- 1 tsp paprika
- 1/2 tsp pepper
- 1/2 tsp garlic powder
Preparation
In a food processor, combine the chickpeas and the sweet potato and blend together.
Add the mixture to a bowl with the flours and spices.
Mix everything together well and use your hands to make it into a dough by pressing it together.
Preheat oven to 375°F.
Line a pan with parchment paper.
Form nugget shapes with the dough mixture and place on the pan.
Bake for 20-22 minutes flipping halfway through.
