Delicious Homemade Cauliflower Cheese Side
Ingredients
- 600g cauliflower florets (not too small)
- 500ml full fat milk
- 2 whole cloves
- 1 bay leaf
- 50g plain flour
- 50g butter
- 110g extra mature cheddar grated
- 2 tsp English Mustard
Preparation
Add the cauliflower to a pan of boiling water with a good pinch of salt. Simmer for 2-3 mins depending on how cooked you like it, 2 mins will leave it a little al dente, 3 mins softer. Drain and set aside.
Heat the milk up in a pan or in the microwave with the bay leaf and cloves and bring up to the boil and turn off the heat. Set aside.
Put the butter in a pan on medium heat, when it’s melted add the flour and stir bringing it together into a paste. Keep moving the paste around the pan for a couple of mins to cook the flour.
Remove the cloves and bay leaf from the milk and discard. Whisk in the milk around 150mls at a time until the mixture becomes thick and smooth, then whisk in a little more until all the milk is added.
Set aside a little of the cheese for sprinkling over the top but whisk in the rest plus the mustard until smooth. Arrange the cauliflower in a baking dish, pour the sauce over the top and sprinkle over the remaining cheese.
Bake on 180 degrees (fan oven) for 30-35 mins until golden brown.
