Garlic and Lemon Oven Baked Fish

Ingredients

  • 6-8 pieces white fish (ideally cod or haddock)
  • 60g butter
  • 6-8 garlic cloves, finely sliced
  • 3 tbsp plain flour
  • 1/2 litre milk
  • water as needed
  • 1 tsp English mustard
  • 3/4 tsp salt
  • handful of fresh chopped parsley
  • juice of one lemon

Preparation

  1. Melt butter in a pan and add the sliced garlic, keeping the flame low to infuse the butter with garlic taste without cooking it, then add plain flour to create a roux.

  2. Add milk gradually to the roux, ensuring it is absorbed before adding more, and if the white sauce is too thick, add water to thin it out, then add salt, mustard, lemon juice, and chopped parsley, and taste to adjust seasoning as necessary.

  3. Place the white fish pieces in a baking dish or cast iron skillet, pour over the sauce to coat them, and cook in a preheated oven at gas mark 6 (200°C, 392°F) for 15-20 minutes or until the fish is cooked through.

  4. Serve with your favourite sides and enjoy.
