AF's Mac and Cheese

Ingredients

  • 500g pasta
  • 4 cloves garlic, finely chopped
  • 1 large onion, diced
  • 3 tbsp butter
  • 1/3 tsp salt
  • 1/2 tsp chilli powder
  • ground black pepper
  • 3 tbsp plain flour
  • 1/2 tsp English Mustard
  • 500ml whole milk
  • 200g mature cheddar, grated or cut into large chunks or 1 soft cheese tub like Philadelphia
  • homemade breadcrumbs

Preparation

  1. Boil pasta as directed on packaging and reserve to one side till needed.

  2. In a large pan, melt the butter and add the diced onion and garlic along with salt and saute for a few minutes. Add in the chilli powder and black pepper and fry for 1 minute. Add the plain flour and fry for 1 to 2 minutes. Then add 1/2 teaspoon English mustard.

  3. Slowly add the milk a little at a time, turn up the heat and thoroughly incorporate until all the milk has been absorbed and you have a thick sauce. Add in the mature cheddar and stir to melt or use soft cheese like Philadelphia.

  4. Add the cooked pasta and mix well to coat with the sauce. Level out the top and add a sprinkling of breadcrumbs. Place under the grill or broiler and broil for 5 minutes until the top is golden brown. Enjoy with a side of salad and steamed vegetables.
