Red Onion and Thyme Gravy

Ingredients

  • 2 tbsp butter
  • 2 tbsp olive oil
  • 5 red onions, finely sliced
  • 2 tbsp thyme leaves
  • 1 tbsp plain flour
  • 1/2 cup red wine
  • 1 1/2 cup vegetable stock
  • 1 tsp salt
  • freshly ground black pepper

Preparation

  1. Melt the butter with the oil in a large saucepan over a medium heat; add the onions and thyme. Cook for about 25 minutes stirring occasionally, until the onions have softened and caramelised slightly.

  2. Sprinkle the flour over the onions and cook, stirring for 1 min.

  3. Stir in the wine, cook for two minutes then gradually add the stock, stirring continuously, until its all incorporated.

  4. Bring to the boil, then reduce the heat and simmer, stirring occasionally, for about 20 mins until thickened.

  5. Season to taste and sprinkle with extra thyme leaves.

  6. If you have any leftover you can freeze it. Just allow it to cool down fully first. When you want to use it, defrost and heat thoroughly before serving.
