Easy Vegan Vegetable Rolls with Sesame Garnish

Ingredients

  • 2 sheets of vegan pastry
  • 1 tablespoon of olive oil
  • 1/2 cup of wholemeal bread crumbs
  • 1 teaspoon of salt, pepper
  • 1 tablespoon of parsley
  • 1/2 cup of celery cut fine
  • 1/2 cup of shredded sweet potato
  • 1 cup of shredded carrots
  • 1 cup of shredded zucchini
  • 1/2 cup of spinach diced
  • 1 small pack of mushrooms cut
  • 1/2 cup of frozen peas
  • 1 medium onion diced
  • 2 garlic cloves crushed
  • Sesame seeds to garnish and vegan butter to glaze

Preparation

  1. In a fry pan add 1 tablespoon of olive oil, and the vegetables. Add salt and pepper. Sauté for 10 minutes then set aside to cool.

  2. Layout the puff pastry sheet and cut it in half.

  3. Place the mixture in the middle of the pastry then roll into a log.

  4. Cut into 4 even pieces.

  5. Brush with vegan butter and sprinkle some sesame seeds.

  6. Cook at 180 for 25 minutes or until golden brown.
