Curried Mini Pot Pies

Ingredients

  • 2 tbsp olive oil
  • 1 onion
  • 2 garlic cloves
  • 1 cup of frozen peas, corn and carrot (or similar)
  • 1 can of white beans
  • 1 cup of water
  • 1 tsp salt, 1 tsp pepper
  • 1 tsp (smoked) paprika, 1/2 tsp onion powder
  • 1 tsp curry powder, 1/2 tsp chili powder
  • Puff pastry

Preparation

  1. Sauté onion on olive oil for 3-4 minutes. Add garlic and let it release the aroma for a minute.

  2. Add the frozen veggies and the beans that you have previously washed and roughly mashed with a fork, leaving about half of it not mashed.

  3. Add water and seasonings, stir well and cook for 5 minutes.

  4. Cut the puff pastry sheets to fit into a muffin pan or make one big pie. Tuck them in the pan, fill with veggies and cook at 180°C for about 15 minutes until it browns a bit.
