Addictive and Delicious Vegetable Parcels

Ingredients

  • 2 cups spinach cut
  • 2 medium zucchinis diced
  • 2 cups grated carrots
  • 1 cup frozen peas
  • 2 crushed garlic cloves
  • 3 grated potatoes
  • 1/2 onion diced
  • 1 cup mushrooms
  • 1 cup spring onions
  • 1 teaspoon salt
  • Pepper
  • 4 sheets vegan pastry
  • 2 tablespoons oil
  • Oil extra for glazing

Preparation

  1. In a fry pan add the oil, vegetables, salt, and pepper. Sauté for 10 minutes. Set aside to cool.

  2. Cut each sheet of pastry into 4 squares and fill with the mixture then shape. Glaze with some oil. Bake in the oven at 180 degrees for 20 minutes or until golden brown.
