Addictive and Delicious Vegetable Parcels
Ingredients
- 2 cups spinach cut
- 2 medium zucchinis diced
- 2 cups grated carrots
- 1 cup frozen peas
- 2 crushed garlic cloves
- 3 grated potatoes
- 1/2 onion diced
- 1 cup mushrooms
- 1 cup spring onions
- 1 teaspoon salt
- Pepper
- 4 sheets vegan pastry
- 2 tablespoons oil
- Oil extra for glazing
Preparation
In a fry pan add the oil, vegetables, salt, and pepper. Sauté for 10 minutes. Set aside to cool.
Cut each sheet of pastry into 4 squares and fill with the mixture then shape. Glaze with some oil. Bake in the oven at 180 degrees for 20 minutes or until golden brown.
