Easy Healthy Vegetable Curry Dish
Ingredients
- Rice of your choice
- 1 tbsp oil
- 1 onion
- 1 garlic clove
- 400 ml coconut milk
- 2 carrots
- Handful of fresh or frozen broccoli
- Handful of edamame or another vegetable of your choice
- 1 tsp turmeric
- 2 tbsp curry spice
- 1 tsp salt
- 1/2 tsp pepper
- Optional: 1 tbsp peanut butter
- Optional: Salted peanuts for topping
Preparation
Cook rice of your choice according to package instructions.
While the rice is cooking, cut the onion into small pieces and fry it in a large pan or pot with the oil.
Quickly cut the carrots and add them to the onions; fry for 1-2 minutes.
Add the remaining ingredients except garlic; bring to a boil and let it simmer for about 5-10 minutes.
Cut the garlic into small pieces and add it last.
Optional: Add 1 tbsp peanut butter.
For topping, add salted peanuts.
Adjust the amount of salt and pepper according to your personal taste.
