Easy Healthy Vegetable Curry Dish

Ingredients

  • Rice of your choice
  • 1 tbsp oil
  • 1 onion
  • 1 garlic clove
  • 400 ml coconut milk
  • 2 carrots
  • Handful of fresh or frozen broccoli
  • Handful of edamame or another vegetable of your choice
  • 1 tsp turmeric
  • 2 tbsp curry spice
  • 1 tsp salt
  • 1/2 tsp pepper
  • Optional: 1 tbsp peanut butter
  • Optional: Salted peanuts for topping

Preparation

  1. Cook rice of your choice according to package instructions.

  2. While the rice is cooking, cut the onion into small pieces and fry it in a large pan or pot with the oil.

  3. Quickly cut the carrots and add them to the onions; fry for 1-2 minutes.

  4. Add the remaining ingredients except garlic; bring to a boil and let it simmer for about 5-10 minutes.

  5. Cut the garlic into small pieces and add it last.

  6. Optional: Add 1 tbsp peanut butter.

  7. For topping, add salted peanuts.

  8. Adjust the amount of salt and pepper according to your personal taste.
