Simple Vegan Vegetable Casserole with Garlic Bread

Ingredients

  • Parsnips
  • Carrots
  • Aubergine
  • Onion
  • Garlic
  • Oil
  • Salt
  • Pepper
  • Parsley
  • Tomato sauce
  • Vegan spread
  • 3 garlic cloves
  • Bread

Preparation

  1. Thinly dice the vegetables: parsnips, carrots, aubergine, onion, and garlic.

  2. Place them in a baking pan.

  3. Drizzle with oil, salt, pepper, and parsley.

  4. Bake in the oven at 220°C for 15 minutes.

  5. Remove from oven, pour over tomato sauce, and return to oven for 20 minutes.

  6. Meanwhile, mix vegan spread, crushed 3 garlic cloves, salt, pepper, and parsley.

  7. Spread the mixture on bread slices.

  8. Bake the bread for 4-5 minutes.

  9. Optionally, add tofu, soya pieces, or beans to the casserole.

  10. Use baguette or any bread for the garlic bread.
