Miso Peanut Butter Roasted Aubergine

Ingredients

  • 2 aubergines
  • 2 tsp miso paste (brown rice miso)
  • 3 tsp tamari
  • 3 tsp maple syrup
  • 2 tsp peanut butter (crunch or smooth)
  • 2 tsp water
  • Chopped fresh herbs (optional)
  • Pinch of sesame seeds (optional)

Preparation

  1. Preheat your oven to 200°C

  2. Slice the aubergines in half and optionally char them in a griddle pan on the flesh side

  3. Slice crisscross lines across the flesh to allow deeper flavor penetration

  4. In a small mixing bowl, combine miso, tamari, maple syrup, peanut butter, and water and whisk until smooth to make the glaze

  5. Place the aubergines on a baking tray, cover evenly with the glaze, and bake in the oven for 25 minutes
