Roasted Aubergine with Miso Peanut Butter Glaze

Ingredients

  • 2 aubergines
  • 2 tsp miso paste
  • 3 tsp tamari
  • 3 tsp maple syrup
  • 2 tsp peanut butter
  • 2 tsp water
  • Chopped fresh herbs (optional)
  • Pinch of sesame seeds (optional)

Preparation

  1. Pre-heat your oven to 200C.

  2. Slice the aubergines in half. Optionally, char them in a griddle pan on the flesh side.

  3. Slice crisscross lines across the flesh to help the flavor penetrate deeper.

  4. Add the miso paste, tamari, maple syrup, peanut butter, and water to a small mixing bowl and whisk until smooth to make the glaze.

  5. Place the aubergines on a baking tray, cover evenly with the glaze, and bake in the oven for 25 minutes.
