Roasted Aubergine with Miso Peanut Butter Glaze
Ingredients
- 2 aubergines
- 2 tsp miso paste
- 3 tsp tamari
- 3 tsp maple syrup
- 2 tsp peanut butter
- 2 tsp water
- Chopped fresh herbs (optional)
- Pinch of sesame seeds (optional)
Preparation
Pre-heat your oven to 200C.
Slice the aubergines in half. Optionally, char them in a griddle pan on the flesh side.
Slice crisscross lines across the flesh to help the flavor penetrate deeper.
Add the miso paste, tamari, maple syrup, peanut butter, and water to a small mixing bowl and whisk until smooth to make the glaze.
Place the aubergines on a baking tray, cover evenly with the glaze, and bake in the oven for 25 minutes.
