Moist Vegan Plum Cake

Ingredients

  • 2 cups spelt flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2/3 cup soy milk
  • 1/4 cup olive oil
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon ginger powder
  • 1 teaspoon cardamom powder
  • 1/2 cup raw sugar
  • 6-7 plums

Preparation

  1. Preheat the oven to 355°F and lightly grease an 8-inch round cake tin with coconut oil or any preferred oil.

  2. Mix all the dry ingredients in a bowl.

  3. In a separate bowl, mix all the wet ingredients.

  4. Whisk the wet ingredients with a hand mixer or a whisk.

  5. Combine the wet mixture into the dry one and mix together, then transfer the mixture into the cake tin.

  6. Avoid overmixing; if the mixture is too lumpy or dry, add a small amount of milk, about 2-3 teaspoons.

  7. Layer the sliced plums on top and bake for 30 to 35 minutes or until the top is golden and a knife inserted into the middle comes out clean.

  8. Serve with coconut whipped cream or vegan butter and masala tea.
