Moist Vegan Plum Cake
Ingredients
- 2 cups spelt flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2/3 cup soy milk
- 1/4 cup olive oil
- 1 teaspoon cinnamon powder
- 1/2 teaspoon ginger powder
- 1 teaspoon cardamom powder
- 1/2 cup raw sugar
- 6-7 plums
Preparation
Preheat the oven to 355°F and lightly grease an 8-inch round cake tin with coconut oil or any preferred oil.
Mix all the dry ingredients in a bowl.
In a separate bowl, mix all the wet ingredients.
Whisk the wet ingredients with a hand mixer or a whisk.
Combine the wet mixture into the dry one and mix together, then transfer the mixture into the cake tin.
Avoid overmixing; if the mixture is too lumpy or dry, add a small amount of milk, about 2-3 teaspoons.
Layer the sliced plums on top and bake for 30 to 35 minutes or until the top is golden and a knife inserted into the middle comes out clean.
Serve with coconut whipped cream or vegan butter and masala tea.
