Vegetable Dal Khichdi from India
Ingredients
- 1 tablespoon oil
- 1.5 tablespoons ghee (clarified butter)
- 1 teaspoon cumin seeds
- 3 cloves garlic
- 1 small chopped onion
- Salt to taste
- 1 teaspoon turmeric powder
- 2 dried red chilies
- 1 teaspoon chili powder
- 1/2 chopped tomato
- 1 cup mixed vegetables (cauliflower, green peas, and French beans)
- 1 cup dal
- 1/2 cup rice
- 3 cups water
- 1/2 teaspoon asafoetida (hing powder)
- Coriander leaves
Preparation
Soak the dal and rice in water for a couple of hours.
Heat a pressure cooker.
Add oil and ghee.
Add cumin seeds.
Finely chop garlic and add it to the cooker.
Add onion and mix well.
Add salt, turmeric powder, and red chilies, then mix well.
Add chili powder and mix well.
Add tomato and mix well.
Add mixed vegetables and mix well.
Add the soaked rice and dal, and mix well.
Add 3 cups of water and mix well.
Add asafoetida on top.
Close the cooker and cook until one whistle is heard.
Open the cooker after the whistle.
Sprinkle chopped coriander leaves on top.
Serve the dal khichdi.
Notes
Dal should be in greater proportion to rice.
