South Indian Coconut Rice Porridge
Ingredients
- 1 cup rice
- 1/2 cup yellow lentils (moong dal)
- Salt as per taste
- 4-5 cups water
- 1 cup coconut milk
- 1.5 teaspoons ghee
- 1 teaspoon cumin seeds
- 4 cloves
- 8-10 black peppercorns
- 2-3 dry red chilies or fresh green chilies
- Some curry leaves
Preparation
In a pressure cooker, add 1 cup rice.
Add 1/2 cup yellow lentils (moong dal).
Add salt as per taste.
Add 4-5 cups water.
Pressure cook for 4-5 whistles.
Transfer the cooked mixture to a pan.
Add 1 cup coconut milk.
Mix everything and cook on a slow flame.
Heat another pan for tadka.
Add 1.5 teaspoons ghee.
Add 1 teaspoon cumin seeds.
Add 4 cloves.
Add 8-10 black peppercorns.
Add 2-3 dry red chilies or fresh green chilies.
Add some curry leaves.
Let it crackle and add the tadka to the rice mixture.
Mix well and turn off the heat.
Serve in a bowl and top with some tadka.
