Avocado Toast with Italian Twist and Fresh Herbs

Ingredients

  • small handful of cherry tomatoes
  • splash of water
  • big handful or two of spinach
  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • about 1/2 avocado
  • 1/4 teaspoon garlic powder
  • splash of fresh lemon juice
  • salt to taste
  • pepper to taste
  • quality bread
  • few fresh basil leaves

Preparation

  1. Slice a small handful of cherry tomatoes into halves or thirds.

  2. Sauté the tomatoes with a splash of water over high heat. Once sizzling, add a big handful or two of spinach. Once the spinach shrinks, mix in 1/4 teaspoon dried rosemary, 1/4 teaspoon dried oregano, and 1/4 teaspoon dried basil. Set aside.

  3. Smash about 1/2 avocado with 1/4 teaspoon garlic powder, a splash of fresh lemon juice, and salt and pepper to taste.

  4. Toast some quality bread, then spread the avocado mixture on each slice, and top with the sautéed vegetables and a few fresh basil leaves.
