Avocado Toast with Italian Twist and Fresh Herbs
Ingredients
- small handful of cherry tomatoes
- splash of water
- big handful or two of spinach
- 1/4 teaspoon dried rosemary
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- about 1/2 avocado
- 1/4 teaspoon garlic powder
- splash of fresh lemon juice
- salt to taste
- pepper to taste
- quality bread
- few fresh basil leaves
Preparation
Slice a small handful of cherry tomatoes into halves or thirds.
Sauté the tomatoes with a splash of water over high heat. Once sizzling, add a big handful or two of spinach. Once the spinach shrinks, mix in 1/4 teaspoon dried rosemary, 1/4 teaspoon dried oregano, and 1/4 teaspoon dried basil. Set aside.
Smash about 1/2 avocado with 1/4 teaspoon garlic powder, a splash of fresh lemon juice, and salt and pepper to taste.
Toast some quality bread, then spread the avocado mixture on each slice, and top with the sautéed vegetables and a few fresh basil leaves.
