Mini Vegan Chickpea Flour Frittatas

Ingredients

  • chickpea flour
  • nutritional yeast
  • baking powder
  • garlic powder
  • dried basil
  • salt and pepper
  • water
  • oat milk
  • sweet corn
  • red bell pepper
  • cherry tomatoes
  • spinach

Preparation

  1. Whisk together chickpea flour, nutritional yeast, baking powder, garlic powder, dried basil, salt and pepper, and a mixture of half oat milk and half water.

  2. Stir in sweet corn, red bell pepper, cherry tomatoes, and spinach.

  3. Pour the batter into a muffin tin and a baking pan.

  4. Bake in the oven at 375°F for 35 minutes.
