Mini Vegan Chickpea Flour Frittatas
Ingredients
- chickpea flour
- nutritional yeast
- baking powder
- garlic powder
- dried basil
- salt and pepper
- water
- oat milk
- sweet corn
- red bell pepper
- cherry tomatoes
- spinach
Preparation
Whisk together chickpea flour, nutritional yeast, baking powder, garlic powder, dried basil, salt and pepper, and a mixture of half oat milk and half water.
Stir in sweet corn, red bell pepper, cherry tomatoes, and spinach.
Pour the batter into a muffin tin and a baking pan.
Bake in the oven at 375°F for 35 minutes.
