Vegan Chickpea Omelette

Ingredients

  • 1 cup chickpea flour or gram flour (easy to find in any Indian store)
  • 1 tbsp ground flax seeds with 3tbsp water (flax egg)
  • 1/2 tsp salt (if using)
  • 1/2 tsp garlic powder (optional)
  • 1 cup water
  • Frozen peas or sweetcorn or dried carrots (or any cooked veggies you fancy

Preparation

  1. Filling (whatever you want!)

  2. Make flax egg in large bowl- add flaxseed with water and let sit- Add the chickpea flour, salt, garlic powder, and then add water slowly whilst whisking until smooth, once smooth, you can add whatever veggies you like to the mixture at this point (I like peas, spinach,dried carrot or chopped tomatoes)

  3. Set aside and let sit for 5-10 mins

  4. Heat your olive oil in the pan on medium-high heat

  5. Pour the omelette batter into the pan, ensuring the batter spreads out evenly on the pan

  6. Let cook on medium heat for 10 minutes until golden brown on the bottom and then

  7. Add your filling to the omelette and fold in half over the filling
