Chickpea Omelette with Tempeh

Ingredients

  • 150ml water
  • 50g chickpea flour
  • 1/2 tsp salt
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tbsp chia seeds
  • Tempeh

Preparation

  1. In a small bowl, mix all of the ingredients together and let this mixture stand for 5-10 minutes

  2. While waiting, heat a lightly oiled pan or a non-stick pan on medium heat, and pop your tempeh into the oven to let it bake until crisp, usually 15-20 minutes

  3. Once the pan has heated up, pour the batter into the pan, and cover this with a lid, leaving it to cook on low heat for 3 minutes until bubbles start to appear on the surface

  4. Add any greens and veg that you’d like, and then take a spatula to fold the omelette over in half, and leave this to cook without the cover for another 2 minutes

  5. Transfer your all vegan omelette to a plate, and serve with your tempeh, more veggies, avocado and a drizzle of almond butter or coconut yogurt
