Plant-Based Poppyseed Bagel Sandwich

Ingredients

  • 3/4 cup garbanzo bean flour
  • 1 flax egg (1 tablespoon flax seeds and 3 tablespoons water)
  • 2 tablespoons nutritional yeast
  • 1 teaspoon baking powder
  • Water, as needed
  • Pinch of salt
  • Poppy seeds for topping

Preparation

  1. Mix the flax egg and let it set in the fridge for 5-10 minutes

  2. In a medium bowl, stir together the flour, baking powder and salt

  3. Once the flax egg is ready, add to the dry mix with about 1/3 to 1/2 cup of water to create the dough

  4. Spray the donut tray or coat with oil, add the mixture, top with poppy seeds, and bake for 8-10 minutes at 375 degrees

  5. Enjoy with your favorite toppings, I used half an avocado
