Coconut Chocolate Chip Blondies

Ingredients

  • 200 ml coconut milk
  • 70 g coconut blossom sugar (or xylitol or regular sugar)
  • 30 g almond butter
  • 30 g coconut flour
  • 100 g rice flour
  • 25 g shredded coconut
  • 1 tsp ground flax seed (or other egg replacement)
  • 90 ml almond milk (or other)
  • 60 g chopped dark chocolate (preferably sugar-free)
  • 1 tsp baking powder
  • 1 pinch of salt

Preparation

  1. Preheat the oven to 180°C (350°F) with upper and lower heat.

  2. Mix all ingredients together to form a dough.

  3. Spread the dough in a square baking form.

  4. Bake for 30-45 minutes.

  5. Cut into pieces and enjoy.
