Vegan Chocolate Chip Cookies

Ingredients

  • 1 cup all-purpose gluten-free flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup sugar equivalent (stevia)
  • 3/4 to 1 cup vegan chocolate chips
  • 4 tablespoons soy or hemp milk (or other unsweetened plant-based milk)
  • 3 tablespoons refined coconut oil

Optional additions

  • 1 teaspoon vanilla powder
  • 2 tablespoons coconut milk powder (for extra chewiness)
  • 1/3 cup cacao powder (for chocolate-flavored cookies)

Preparation

  1. Combine dry and wet ingredients separately then bring together to form a dough.

  2. Shape the dough into balls and place on a baking sheet

  3. Bake at approximately 160 degrees for 11 minutes in a pre-heated oven.

  4. Allow to cool and remove from the oven
