Vegan Chocolate Chip Cookies
Ingredients
- 1 cup all-purpose gluten-free flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup sugar equivalent (stevia)
- 3/4 to 1 cup vegan chocolate chips
- 4 tablespoons soy or hemp milk (or other unsweetened plant-based milk)
- 3 tablespoons refined coconut oil
Optional additions
- 1 teaspoon vanilla powder
- 2 tablespoons coconut milk powder (for extra chewiness)
- 1/3 cup cacao powder (for chocolate-flavored cookies)
Preparation
Combine dry and wet ingredients separately then bring together to form a dough.
Shape the dough into balls and place on a baking sheet
Bake at approximately 160 degrees for 11 minutes in a pre-heated oven.
Allow to cool and remove from the oven
