Creamy Potato and Bean Mash with Pickled Beets, Fried Onions, Walnuts, and Crispy Kale
Ingredients
- 400 g potatoes
- 1 cup cooked cannellini beans
- 0.5 cup soy cooking cream
- Salt, to taste
Preparation
Boil the potatoes in salted water until tender. Add the beans when the potatoes are almost done to allow them to soften and heat up.
Once the potatoes are tender, drain the water from the pot. Sprinkle the potatoes and beans with salt, and then mash them using a fork.
Finally, stir in the soy cream. For a fluffier texture, you can use a whisk during the last stages of mixing.
