Easy Cucumber Rolls with Fresh Vegetables
Ingredients
- 1 cucumber
- shredded peppers
- shredded red cabbage
- shredded carrot
- sugar snap peas or green beans
- shredded beetroot
- micro greens or sprouts
- coconut aminos
- wasabi (optional)
Preparation
Slice the cucumber lengthways into long strips using a mandolin or vegetable peeler.
Chop the vegetables very finely or shred them with a julienne cutter.
Place a mixture of the vegetables at one end of a cucumber slice and roll it up.
Use a toothpick to secure the roll in place.
Optionally, add wasabi to coconut aminos for dipping.
