Easy Cucumber Rolls with Fresh Vegetables

Ingredients

  • 1 cucumber
  • shredded peppers
  • shredded red cabbage
  • shredded carrot
  • sugar snap peas or green beans
  • shredded beetroot
  • micro greens or sprouts
  • coconut aminos
  • wasabi (optional)

Preparation

  1. Slice the cucumber lengthways into long strips using a mandolin or vegetable peeler.

  2. Chop the vegetables very finely or shred them with a julienne cutter.

  3. Place a mixture of the vegetables at one end of a cucumber slice and roll it up.

  4. Use a toothpick to secure the roll in place.

  5. Optionally, add wasabi to coconut aminos for dipping.
