Smashed Cucumber in Garlicky Sauce

Ingredients

  • 1 large cucumber⁣
  • pinch of salt⁣

Preparation

  1. Bash the cucumber with something flat like the back of a cleaver or a wine bottle. Cut cumcumber lengthways then diagonally slice it into rough chunks. Transfer to a bowl and then sprinkle pinch of salt onto and let it sit for 10 minutes.⁣

  2. After 10 minutes water should have pooled underneath the cucumber. Simply drain the water then return cucumber to bowl

  3. For the sauce: 1 tbs finely diced garlic⁣, 1 tbs light soy sauce⁣, 1 tsp Chinkiang vinegar, 2 tbsp chilli oil, 0.5 tsp ground Sichuan pepper⁣

  4. Mix together all the sauce ingredients then pour on top of cucumber

  5. Mix well to incorporate then you are good to go
