Smashed Cucumber in Garlicky Sauce
Ingredients
- 1 large cucumber
- pinch of salt
Preparation
Bash the cucumber with something flat like the back of a cleaver or a wine bottle. Cut cumcumber lengthways then diagonally slice it into rough chunks. Transfer to a bowl and then sprinkle pinch of salt onto and let it sit for 10 minutes.
After 10 minutes water should have pooled underneath the cucumber. Simply drain the water then return cucumber to bowl
For the sauce: 1 tbs finely diced garlic, 1 tbs light soy sauce, 1 tsp Chinkiang vinegar, 2 tbsp chilli oil, 0.5 tsp ground Sichuan pepper
Mix together all the sauce ingredients then pour on top of cucumber
Mix well to incorporate then you are good to go
