Wild Mushroom Crostini with Shallots and Wine

Ingredients

  • 1/4 cup minced shallot
  • 2 cloves garlic minced
  • 2 cups wild mushrooms
  • 3 tbsp Madeira wine
  • 2 tbsp minced chives
  • salt and pepper to taste

Preparation

  1. Bring large pan to medium heat.

  2. Add shallots; once they begin to stick, add mushrooms and garlic.

  3. Stir until mushrooms begin to stick but not burn.

  4. Add wine to deglaze and cook until pan begins to dry, about 4 minutes.

  5. Gently stir in chives and salt and pepper.
