Delicious Vegan Satay Bowl with Stir-Fried Vegetables
Ingredients
- fresh spinach
- mixed beans
- cucumber
- sweet potatoes
Satay sauce
- 2 tbsp @macr0mike original PB+
- a touch of water
- 1/2 tbsp tamari
- 1/4 tsp chilli flakes
- 1 tsp lemon juice
Stir-fry vegetables
- onion
- garlic
- ginger
- zucchini
- carrot
- red cabbage
- chinese broccoli
Preparation
Bake the sweet potatoes until tender.
Stir fry the vegetables until cooked.
Mix the satay sauce ingredients together.
Assemble the bowl starting with fresh spinach at the bottom, then add mixed beans, stir-fried vegetables, cucumber, baked sweet potatoes, and top with satay sauce.
