Quick and Easy Vegan Basmati Rice Bowl with Apricot Ginger Dressing

Ingredients

  • Brown basmati rice
  • chickpeas
  • carrots
  • broccoli
  • sugar snap peas
  • bok choy
  • hemp seeds
  • black sesame

Dressing

  • 5 apricots
  • 1/2 inch ginger
  • 1 whole navel orange, peeled
  • 2 tbsp cider vinegar
  • 1 tbsp tamari
  • 1/4 cup roasted cashews
  • 1/4 cup water

Preparation

  1. Puree the dressing ingredients until creamy.

  2. Cook all the grains and vegetables.

  3. Sprinkle the cooked items with hemp seeds and black sesame.
