Quick and Easy Vegan Basmati Rice Bowl with Apricot Ginger Dressing
Ingredients
- Brown basmati rice
- chickpeas
- carrots
- broccoli
- sugar snap peas
- bok choy
- hemp seeds
- black sesame
Dressing
- 5 apricots
- 1/2 inch ginger
- 1 whole navel orange, peeled
- 2 tbsp cider vinegar
- 1 tbsp tamari
- 1/4 cup roasted cashews
- 1/4 cup water
Preparation
Puree the dressing ingredients until creamy.
Cook all the grains and vegetables.
Sprinkle the cooked items with hemp seeds and black sesame.
Top with the apricot ginger dressing.
