Stuffed Sweet Potatoes with Vegetables and Sauce

Ingredients

  • 2 sweet potatoes
  • oil (optional)
  • salt (optional)

Vegetables

  • carrots
  • red onions
  • celery
  • cooked garbanzos
  • garlic
  • red cabbage
  • squash

Avocado sauce

  • 1 avocado
  • water
  • lime juice
  • serrano pepper
  • garlic
  • salt
  • pepper
  • cilantro

Preparation

  1. Bake 2 sweet potatoes in the oven at 400°F for 30 minutes. Optionally, coat them with oil and salt before baking.

  2. Cook the vegetables in a pan: carrots, red onions, celery, cooked garbanzos, garlic, red cabbage, and squash.

  3. Mix the cooked vegetables with the inside of the sweet potatoes.

  4. Add the avocado sauce made from one avocado, water, lime juice, serrano pepper, garlic, salt, pepper, and cilantro.
