Delicious Vegan Wraps with Fresh Vegetables and Sour Cream
Ingredients
- carrots
- onions
- tomatoes
- cilantro
- jalapeño
- avocado
- grilled mushrooms
- grilled corn
- yellow bell pepper
- cabbage
- peanuts
- salt
- pepper
- lemon
Sour cream base
- silken tofu or cashews or macadamia nuts or sesame seeds or store-bought vegan sour cream
- 2-3 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1-2 garlic cloves or garlic powder
- fresh onion or onion powder
- pepper
- salt
- water as needed
Preparation
Slightly season the vegetable mix with salt, pepper, and lemon to taste.
To make the vegan sour cream, choose a base (such as silken tofu, cashews, macadamia nuts, or sesame seeds) and blend it with 2-3 tablespoons lemon juice, 1 tablespoon apple cider vinegar, 1-2 garlic cloves or powder, fresh onion or powder, pepper and salt to taste. Add water if needed to achieve desired consistency.
For the wraps, steam the cabbage or use it raw. Then add the vegetable mixture, peanuts for extra crunch, and the sour cream on top.
