Massaged Kale Salad with Lemon Maple Vinaigrette

Ingredients

  • kale, finely chopped
  • EVOO
  • Lemon Juice
  • cucumber, sliced
  • carrots, shredded
  • Cherry tomatoes, halved
  • golden raisins
  • saffronroadfood crunchy chickpeas
  • Pumpkin seeds

Vinaigrette

  • 1/4 cup EVOO
  • 1 lemon juiced
  • 1/4 cup apple cider vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon old style whole grain mustard
  • 1 teaspoon maple syrup
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon garlic powder

Preparation

  1. Place rinsed and dried kale in a large bowl. Add in a small amount of EVOO and lemon juice (enough to coat the greens but not fully saturate or leave excess liquid at bottom)

  2. Using your hands, massage the kale for 60 seconds, rubbing each leaf!

  3. Top with remaining ingredients and toss with dressing below!

  4. Kale can absolutely be massaged in advance! I prepped my salads on Sunday night, massaged the kale, transferred to containers, topped with remaining ingredients, and then wait to put the dressing on until I’m ready to eat it!

Vinaigrette

  1. Add all ingredients to a mason jar.

  2. Shake vigorously to combine!
