Quick and Easy Vegan Potato Salad
Ingredients
Dressing
- 1/4 cup vegan mayo
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tbsp maple syrup
- 1 tbsp lemon juice
- 1 tbsp water
- 1 tsp dijon mustard
- 1/2 tsp fresh rosemary, finely chopped
- 1/4 tsp garlic powder
- A pinch of salt & pepper
- A pinch of paprika (optional)
Salad
- 6 large red potatoes, peeled and chopped
- 1/4 cup red onion, thinly sliced
- 1 large celery rib, finely chopped
Preparation
Bring potatoes to a boil in a large pot of cold water. Let simmer until you can poke with a fork but still firm (about 10 mins). Be sure not to over-cook the potatoes.
While potatoes are cooking, whisk together all dressing ingredients. I usually just throw all of my dressing ingredients into a small mason jar with a lid and shake shake shake.
After potatoes have cooled, add onions, celery and carefully toss with dressing.
Transfer to a serving plate and sprinkle with a little paprika. That’s it, that’s all, potatoes for all!
