Quick and Easy Vegan Potato Salad

Ingredients

Dressing

  • 1/4 cup vegan mayo
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 1 tsp dijon mustard
  • 1/2 tsp fresh rosemary, finely chopped
  • 1/4 tsp garlic powder
  • A pinch of salt & pepper
  • A pinch of paprika (optional)

Salad

  • 6 large red potatoes, peeled and chopped
  • 1/4 cup red onion, thinly sliced
  • 1 large celery rib, finely chopped

Preparation

  1. Bring potatoes to a boil in a large pot of cold water. Let simmer until you can poke with a fork but still firm (about 10 mins). Be sure not to over-cook the potatoes.

  2. While potatoes are cooking, whisk together all dressing ingredients. I usually just throw all of my dressing ingredients into a small mason jar with a lid and shake shake shake.

  3. After potatoes have cooled, add onions, celery and carefully toss with dressing.

  4. Transfer to a serving plate and sprinkle with a little paprika. That’s it, that’s all, potatoes for all!
