Roasted Sweet Potato and Beetroot Salad

Ingredients

  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 tsp dijon mustard
  • 2 tsp maple syrup
  • season to taste
  • 2 tbsp water

Preparation

  1. Add all ingredients to a bowl and whisk together. Add a little more water if needed to loosen
