Oyster Mushroom and Avocado Toast

Ingredients

Guacamole

  • 1 avocado
  • 100g chickpeas
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp olive oil
  • Lemon juice
  • 1-2 tbsp water

Oyster mushroom

  • 1 tbsp olive oil
  • 3g fresh chili
  • 1 garlic clove
  • Fresh basil
  • 100g oyster mushroom

Preparation

  1. Mix all the guacamole ingredients in a high-speed blender.

  2. Heat olive oil in a pan and fry the spices, including chili, garlic, and basil

  3. Add the oyster mushroom to the pan and fry until golden.

  4. Spread the guacamole on sourdough bread, top with the fried oyster mushroom mixture, and serve
