Stuffed Sweet Potatoes with Veggies and Avocado Sauce
Ingredients
- 2 sweet potatoes
- Oil (optional)
- Salt (optional)
- Carrots
- Red onions
- Celery
- Cooked garbanzos
- Garlic
- Red cabbage
- Squash
Avocado sauce
- One avocado
- Water
- Lime juice
- Serrano
- Garlic
- Salt
- Pepper
- Cilantro
Preparation
Bake 2 sweet potatoes in the oven at 400°F for 30 minutes. Optionally, coat with oil and salt.
In a pan, cook leftover veggies such as carrots, red onions, celery, cooked garbanzos, garlic, red cabbage, and squash.
Once the veggies are cooked, mix them with the inside of the baked potatoes.
Prepare the avocado sauce by combining one avocado, water, lime juice, serrano, garlic, salt, pepper, and cilantro, and add it to the mixture.
