Healthy Vegan Sweet Potato Banana Smoothie

Ingredients

  • 1/2 cup steamed then frozen sweet potato
  • 1 frozen banana
  • 1/2 tsp cinnamon
  • 1/2 tsp lucuma powder
  • 1/2 tsp maca powder
  • 2 Tbsp rolled oats
  • 1/4 cup plant milk (I used almond)
  • 1/2 tsp vanilla extract
  • water to consistency

Preparation

  1. Blend all ingredients together.

  2. Top with raw creamy nut butter, low FODMAP granola, and juicy blueberries.

  3. Note: Sweet potatoes should be eaten steamed, boiled, or baked for highest nutritional benefits; limit servings to 1/2 cup cooked to avoid digestive issues.
