Homemade Green Chickpea Fritters

Ingredients

  • 3 cups chickpeas
  • 2 cups rough chopped greens such as spinach, kale, and collards
  • Juice of 1 lime
  • 2 garlic cloves
  • 1/2 bunch cilantro
  • 1/2 bunch parsley
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1.5 cups GF flour
  • 2 tablespoons sesame seeds
  • Pinch of cayenne pepper
  • Pink Himalayan salt to taste
  • Pepper to taste

Preparation

  1. Toss everything aside from the flour in a food processor and blend until most chickpeas look like a rough chop and mix is bright green

  2. Transfer into a bowl then add the flour half a cup at a time while kneading

  3. Once a smooth dough-like consistency is achieved, refrigerate or form into disks to cook immediately

  4. Formed fritters can also be frozen to cook off at a later time

  5. Fry the fritters in hot oil until golden brown
