Homemade Green Chickpea Fritters
Ingredients
- 3 cups chickpeas
- 2 cups rough chopped greens such as spinach, kale, and collards
- Juice of 1 lime
- 2 garlic cloves
- 1/2 bunch cilantro
- 1/2 bunch parsley
- 2 tsp cumin
- 1 tsp smoked paprika
- 1.5 cups GF flour
- 2 tablespoons sesame seeds
- Pinch of cayenne pepper
- Pink Himalayan salt to taste
- Pepper to taste
Preparation
Toss everything aside from the flour in a food processor and blend until most chickpeas look like a rough chop and mix is bright green
Transfer into a bowl then add the flour half a cup at a time while kneading
Once a smooth dough-like consistency is achieved, refrigerate or form into disks to cook immediately
Formed fritters can also be frozen to cook off at a later time
Fry the fritters in hot oil until golden brown
