Vegan Spicy Smashed Chickpea Salad on Bagel
Ingredients
- 1 can drained and rinsed chickpeas
- 2 cm diced leek
- 1/2 diced onion
- 1/3 teaspoon smoked paprika powder
- 1 tablespoon vegan mayonnaise
- 1 tablespoon unsweetened yogurt
- 1/2 tablespoon sweet mustard
- Cayenne pepper to taste
- Pinch of harissa powder
- Pinch of cumin
- Salt and pepper to taste
Preparation
Roughly mash the chickpeas with the back of a fork or potato masher.
Add the other ingredients and mix until you get a nice thick mixture.
