Chuna Mayo Sandwich Filling

Ingredients

  • 1 tin of chickpeas, drained (I keep the chickpea water/aquafaba for baking)
  • 2 tbsp vegan mayo
  • Salt and pepper

Preparation

  1. Crush the chickpeas in a bowl with a fork

  2. Add the mayo, stir and season

  3. I like to spread on gluten free toast and top with cucumber, you could also add sweetcorn or make a Nicoise with black olives, new potatoes and green beans
