Chuna Mayo Sandwich Filling
Ingredients
- 1 tin of chickpeas, drained (I keep the chickpea water/aquafaba for baking)
- 2 tbsp vegan mayo
- Salt and pepper
Preparation
Crush the chickpeas in a bowl with a fork
Add the mayo, stir and season
I like to spread on gluten free toast and top with cucumber, you could also add sweetcorn or make a Nicoise with black olives, new potatoes and green beans
