Cajun Chickpea Cakes and Spicy Mayo
Ingredients
- 1/4 cup diced onion
- 1/4 cup diced green pepper
- 1 stalk celery, diced
- 1 can chickpeas, rinsed and drained
- 1 teaspoon paprika
- pinch cayenne pepper
- 1 teaspoon hot sauce
- 2 tablespoons oat flour
- 1 tablespoon tapioca starch
- salt and pepper to taste
- avocado oil for frying
Spicy mayo
- avocado mayo
- Frank's Red Hot sauce
Preparation
Sauté onion, pepper, and celery in a pan with oil until tender.
Place chickpeas in a food processor and blend until chunky.
Add all ingredients to a bowl and store the bowl with mixture in the fridge for 30 minutes.
Pan fry for about 3-4 minutes per side until crispy and brown.
Spicy mayo
Whisk avocado mayo and Frank's Red Hot sauce until smooth.
