Cajun Chickpea Cakes and Spicy Mayo

Ingredients

  • 1/4 cup diced onion
  • 1/4 cup diced green pepper
  • 1 stalk celery, diced
  • 1 can chickpeas, rinsed and drained
  • 1 teaspoon paprika
  • pinch cayenne pepper
  • 1 teaspoon hot sauce
  • 2 tablespoons oat flour
  • 1 tablespoon tapioca starch
  • salt and pepper to taste
  • avocado oil for frying

Spicy mayo

  • avocado mayo
  • Frank's Red Hot sauce

Preparation

  1. Sauté onion, pepper, and celery in a pan with oil until tender.

  2. Place chickpeas in a food processor and blend until chunky.

  3. Add all ingredients to a bowl and store the bowl with mixture in the fridge for 30 minutes.

  4. Pan fry for about 3-4 minutes per side until crispy and brown.

Spicy mayo

  1. Whisk avocado mayo and Frank's Red Hot sauce until smooth.
