Kale Yeah Soft Flour Tortillas

Ingredients

  • 1/2 cups (180 g) all purpose flour
  • 1 cup whole wheat flour (120 g)
  • tbl vegetable oil
  • 1 tsp kosher salt
  • 1 tsp baking powder
  • 2 cups packed kale leaves chopped with hard stems removed (56g)

Preparation

  1. Blanch kale: Bring a large pot of water to a boil add 2 tsp is kosher salt, add kale, boil for 30 seconds

  2. Using a slotted spoon, retrieve kale place in a bowl of cold water to stop cooking

  3. Then squeeze out water from kale

  4. Using a high speed blender, purée kale till smooth with 1 tbl oil & 1/2- 3/4 cup hot water from salted water from stove. Set aside

  5. In a mixing bowl combine flours, salt & baking powder

  6. Add remaining 5 tbl of oil, rub oil into flour till course & crumbly

  7. Add kale purée to flour

  8. Mix until dough becomes shaggy and starts to come together

  9. Take out of bowl and kneed 2-3 min till dough becomes smooth, if sticky add a bit more flour

  10. Rest 1/2 hour covered with tea towel or plastic wrap

  11. Divide dough into 8 equal sized pieces

  12. Roll out dough into a circular 7- 8 inch diameter till desired thickness

  13. Heat non stick pan on med/med high heat for 3 min

  14. When hot, place tortilla on pan, heat for 30 sec, bubbles will start to form, flip & heat for another 30 seconds

  15. Immediately cover with with a tea towel or foil. repeat

  16. S you get into the groove you can roll out a tortilla while one is cooking or split the work and make them with a friend
