One Pan Creamy Tortellini and Smoked Sausage

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, cut into 1/4-inch rounds
  • 1/2 cup diced white onion
  • 1 clove garlic, minced
  • 20 ounces refrigerated cheese tortellini
  • 28 ounces crushed tomatoes (or whole tomatoes, cut with kitchen scissors)
  • 1 cup low sodium chicken broth
  • Salt and pepper, to taste
  • 2 tablespoons cream cheese, room temperature
  • 1 cup freshly shredded sharp cheddar cheese
  • 1 cup freshly shredded jack cheese
  • Fresh chopped parsley, for garnish

Preparation

  1. Heat 1 tablespoon olive oil in a large, deep skillet over medium heat

  2. Add onion and cook, stirring often, until softened, about 3-4 minutes

  3. Stir in minced garlic and cook for 30 seconds

  4. Add sausage and cook until browned on both sides

  5. Stir in chicken broth, tortellini, tomatoes, and a pinch of salt and pepper

  6. Bring to a boil, stirring often

  7. Turn heat to low, cover, and simmer for 10-15 minutes, or until pasta is tender, stirring at least once to prevent sticking

  8. If there is too much liquid in the pan, spoon some out, but leave enough for the sauce

  9. Remove from heat and stir in the cheeses, reserving a handful for topping

  10. Cover and let stand for 5-10 minutes, or broil for 2-3 minutes to brown the top

  11. Garnish with fresh parsley, if desired

Tips

  1. For a quicker cooking method, cook uncovered over medium-low heat, stirring often, for 8-10 minutes instead of simmering covered
