Turkish Pasta with Mince and Garlic Yogurt
Ingredients
- 500g pasta (not spaghetti, you want short pieces like penne, shells, bow ties)
- 1kg combined mince (I’ve gone beef and pork)
- 1 onions, diced
- 2 tsp paprika
- 2 tsp white pepper powder
- 2 tsp curry powder
- Olive oil
- Salt and pepper to taste
Garlic yogurt sauce
- 450-500g tub Greek yogurt (about 2 cups)
- 3 cloves garlic, minced
- Juice of 1 lemon
- Salt to taste
Paprika butter sauce
- 120g butter (about 1/2 cup)
- 2 tsp paprika
Garnishes
- Grated stretchy cheese like a firm mozzarella or gouda
- Chopped tomatoes
- Fresh mint and parsley
Preparation
Cook your pasta in a big pot of boiling water and drain and put olive oil on to avoid sticking
Cook mince in olive oil, pork first if you’re using pork!
Add spices once browned and cook until crispy and dark brown
Make paprika butter sauce on low heat
Make your garlic yoghurt
Serve pasta, cheese, mince, garlic yoghurt, tomatoes and herbs
Tips
Don’t speak to anyone for 2 hours after making the garlic yogurt to avoid garlic breath
