Roast Garlic and Prawn Pasta

Ingredients

  • 400g pasta of your choice
  • 400g king prawns, deveined and shells removed
  • 1 large head of garlic
  • Zest of 1 unwaxed lemon and half the juice
  • 1/3 cup finely chopped parsley
  • 2 tbsp olive oil
  • Salt and pepper

Preparation

  1. Preheat the oven to 180°C.

  2. Roast the garlic by chopping the top off to reveal each of the cloves. Drizzle with a little olive oil, add some salt, and wrap tightly in foil. Bake for 45 minutes until golden and caramelized.

  3. Take a break for 20 minutes.

  4. Cook the pasta in salted water.

  5. While the pasta is cooking, in another large pan, add the olive oil on medium to high heat.

  6. Add the prawns to the oil and cook until almost cooked through. This only takes a couple of minutes.

  7. Squeeze out the roasted garlic and add it to the prawns. Add the lemon zest, lemon juice, and parsley. Mix well. That’s your sauce made. You can add a couple of tablespoons of the pasta water to make it a little thinner if you prefer.

  8. When the pasta is ready, drain it, add it to the prawns and sauce. Stir through.

  9. Season well and serve immediately.
